- 12 PC Golden Little Gems Yellow Mini Potatoes halved, lengthwise
- 1 tsp olive oil
- 1/2 cup finely grated Gruyere cheese
- 1/2 cup PC Homestyle Cooked Ham
- 1 tbsp finely chopped green onion
- 1 tbsp finely chopped cornichon or sour dill pickle
- 3 tbsp PC Blue Menu Light Mayonnaise Type Dressing

Step 1
1. Preheat oven to 375°F.
2. Cut thin slice from bottom of potato halves so they will sit flat. Toss potatoes with olive oil. Stand on baking sheet. Sprinkle tops with Gruyere. Bake in centre of oven until crispy and golden, about 35 to 40 minutes. Set aside to cool.
3. In bowl, stir together ham, onion, cornichons and mayonnaise. Divide mixture among potato halves. Serve garnished with chives, if desired.
