Ingredients

  • 1/3 Cup Olive Oil
  • 1 Large Onion, sliced
  • 2 Cloves Garlic, diced
  • 3 Medium sized zucchini, sliced diagonally
  • 2 Green Bell Peppers, cut into strips
  • 1 Small Eggplant, peeled and cubed
  • 3 Tbsp Whole Wheat Flour
  • 1 1/2 Cans Diced Tomatoes (or plum tomatoes)
  • 1 Tsp Basil
  • 1 Tsp Oregano
  • Sea Salt and Black Pepper to taste

Preparation

Step 1

1. In large pot or skillet, heat oil. Saute onion and garlic until onions are transparent.

2. In large mixing bowl, lightly mix together zucchini, peppers, eggplant and flour. Add vegetables to the pot. Cover and reduce heat. Let cook for 30 minutes.

3. Add in tomatoes, basil and oregano. Let simmer, uncovered, for about 15-20 minutes, until mixture thickens. Serve hot.
