Ingredients

  • olive oil
  • 1 large onion
  • 1 large shallot
  • 6 cups cauliflower florets (about 1 large head)
  • 1 large package fresh spinach (11 oz)
  • 3 (15.5 oz) cans chickpeas, drained and rinsed
  • 3 8-oz cans tomato sauce
  • 1 can tomato paste
  • 1/2 cup white wine vinegar
  • 2 tablespoons minced ginger
  • 3 tablespoons curry powder
  • 2 cloves garlic, minced
  • 3 teaspoons ground cumin
  • 1 teaspoons ground cinnamon
  • 2 cup chicken or vegetable broth

Step 1

Brown onion and shallot in olive oil in pressure cooker. Add remaining ingredients and stir well. Cook on high pressure for 5 minutes.
