Ingredients
- 4 medium potatoes, cut into 3/4" cubes and microwaved 8-10 minutes until tender
- 1 lb boned and skinned chicken breasts, cut into 3/4" cubes
- 2 Tbsp olive oil
- 1 c prepared tomato salsa
- 1 small can whole kernel corn, drained

Preparation
Step 1
While potatoes cook, in a large skillet toss and brown chicken in oil over high heat - 5 minutes.
Add potatoes; saute and toss until potatoes are lightly browned.
Add salsa and corn; toss until heated through.
