Granola in the Slow Cooker

Ingredients
- 4 cups old fashion oats
- 1 cup sunflower kernels
- 1 cup flaked coconut
- 1/2 tsp salt
- 1/2 cup canola oil
- 1/2 cup brown rice syrup OR honey
- 1 cup dried pineapple, chopped
- 1 cup dried mango, chopped
- Dried raisins, currants, cranberries, papaya, kiwi, strawberries, etc ALL work in this recipe

Preparation
Step 1
In a 3 quart slow cooker, combine oats, sunflower kernels, coconut and salt. In a small bowl, whisk oil and brown rice syrup until blended. Stir into oats mixture. Cook, covered, on high for 2 hours, stirring well every 20 minutes.
Remove granola to baking sheets, spreading evenly, cool completely. Stir in chopped pineapple and mangoes. Store in airtight containers.
1/2 cup serving is 295 calories, 15g fat, 0g cholesterol, 167 mg sodium, 38g carbs, 4g fiber, 5g protein
