  • 1 lb Very Good Quality Semi-Sweet Chocolate
  • 1 cup Heavy Cream

Step 1

Make a ganache. Chop the chocolate into small pieces and place into stainless steel mixing bowl. Scald the cream and then pour over chopped chocolate. Add desired flavorings, such as liquer, hazelnut paste, vanilla, or other extracts. Place the bowl OVER a pot of simmering water and stir until the chocolate is completely melted into the cream.

Once the ganache is a smooth consistency, cool the ganache in the refrigerator. The cooled mixture should be compact and firm but soft.

Form into small balls of ganache. One way to do this is with a small melon baller scoop.

Toss the balls of ganache in cocoa powder, powdered sugar or cinnamon, jimmies or finely ground nuts.
