Ingredients

  • 1- 1/2 cups Beef Broth
  • 3/4 cup Uncooked Orzo or Rosamarina Pasta (4-1/2 oz.)
  • 1/2 can Niblets vacuum-packed whole kernel corn - undrained
  • 1/2 can Old El Paso chopped Green Chilis - undrained (4.5 oz.)
  • 1 tsp Olive or Veggie Oil
  • 1/4 lb Beef - cut for stir-fry
  • 1/2 med. Bell Pepper - cut into 1/4" strips
  • 1/8 cup Fresh Cilantro - chopped Fresh Cilantro - chopped

Step 1

1 Mix Broth, Pasta, Corn & Chilies in 2 Qrt. saucepan. Heat to boiling; reduce heat. Cover & simmer for ~ 10 min. or until pasta is just tender; remove from heat. Let stand ~ 5 min. or until almost all liquid is absorbed.
2 While Pasta is cooking, spray 10" skillet w/ cooking spray. Add Oil; heat over Med-High heat. Cook Beef & Bell Pepper in oil ~ 5 min., stirring occasionally, until beef is brown.
3 Stir beef mixture into pasta mixture. Stir in Cilantro.
