Ingredients
- 2/3 cup lime juice (juice of 4 to 5 limes)
- 1/3 cup dry white wine
- 3 tablespoons olive oil
- 1/4 cup chopped fresh cilantro
- 1 garlic head, cloves separated, peeled and chopped
- 1 (3-3 1/2-pound) chicken, cut into 8 pieces
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

Preparation
Step 1
Coat a 9x13 inch baking dish with cooking spray. In a large bowl, combine lime juice, wine, oil, cilantro, and garlic.
Sprinkle chicken with salt and pepper and place in prepared baking dish. Pour lime mixture over top of chicken, cover, and marinate 20 to 30 minutes in refrigerator.
Bake uncovered in a preheated 375 degree F oven 60 to 70 minutes, or until no pink remains and juices run clear.
