Paella

Use a paellero for the Paella. If you do not own one, use a generous lidded casserole to cook in.

Ingredients
- 2 cups chicken, cooked and cut in 1-1 1/2 inch pieces
- 4 cups chicken stock
- 1/4 cup olive oil
- 1/2 cup thinly sliced onions
- 2 cups rice
- up to 2 tsp saffron
- 2 garlic cloves, crushed
- 2 red bell peppers, sliced, seeds and membrane removed
- 1-2 tsp paprika *I use smoked paprika
- 1/4 tsp oregano
- Chorizo or hard Spanish sausage, thinly sliced
- Large/Giant Shrimp, raw
- Clams, in their shells, scrubbed well
- Mussels, in their shells, scrubbed well

Preparation
Step 1
Preheat oven to 350 degrees and have the chicken and stock ready on-hand. Add the saffron to the stock.
1. On the stovetop, heat the oil, over medium heat. Cook the onions until golden. Add the rice, stirring until lightly browned.
2. Add the stock. Then add the garlic, bell peppers, paprika, oregano and chorizo/spanish sausage. Then add the chicken, arranging it toward the top of the mixture.
3. Cover and bake (if using a lidded casserole) for 15 minutes. If using a paellero, you can cover with foil if you desire. After 15 minutes, arrange the shrimp, clams and mussels around the top of the mix. Re-cover and cook for another 10 minutes or so.
