Ingredients
- Wash and weigh 7 lbs. of cucumbers/peppers or yellow squash and onions.
- Slice thin; put in very large pot and add 2 cups of cooking lime and 2 gallons of water and soak overnight.
- Remove from lime and water and wash with clear water; cover with cold water and let stand for 3 hours.
- Mix 2 qts. of vinegar, 5 lbs. of sugar, 1 t. celery seed, 1 t. salt. Drain water from above; pour this over squash and let stand 5 hours.
- Put on stove and let boil 35 min. Put in jars and seal.
