SALAD-SPINICH SALAD WITH STRAWBERRIES AND POPPY SEES –BERRY VINAIGRETTE

Ingredients
- Vinaigrette
- 2 TB poppy seeds
- 2 TB Dijon mustard
- 2 Tb honey
- 1 cup canola or safflower oil
- 1/3 cup seasonal berry vinegar ( I used raspberry vinegar bought at Costco)
- 2 bunches spinach, stemmed
- 2 cup strawberries, stemmed and quartered
- 1 cup thin sliced button mushrooms
- 1/2 cup thin sliced green onions
- 1/2-3/4 cup sliced almonds, toasted Also used toasted pecans another time and was good
- Can also add feta crumbled

Preparation
Step 1
To make vinaigrette place poppy seeds, mustard and honey in a small bowl and gradually whisk oil until all the oil is used & the mixture is the consistency of mayonnaise. Gradually whisk in the berry vinegar to think the mixture to the consistency of heavy cream.
Place the leaves of spinach in a bowl and toss with the strawberries, mushrooms, green onions, almonds & enough vinaigrette to moisten them.
Serve on salad plates and pass extra vinaigrette.
Add nasturtiums for color on salad.
Serves 6-8
