Easy Springerle

I have a pan with these shapes so I don't have to roll out the dough, also I don't like the traditional anise flavoring, so I am using vanilla. You have to let this dough dry overnight before baking. So it would be good to make Christmas Eve.

Ingredients
- 4 Eggs
- 2 Cups Sugar
- 1 teaspoon anise or vanilla extract
- 3 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt

Preparation
Step 1
In large bowl, beat eggs on high speed until very thick, about 3 to 4 minutes. Gradually beat in sugar; continue beating for 15 minutes. Beat in extract. Lightly spoon flour into measuring cup; level off. Stir in remaining ingredients. Cover with plastic wrap; refrigerate 1 hour for easier handling. Or if you have a springerle pan, spray pan with pan spray and press dough into pan. If rolling out, roll out with a springerle rolling pin. Cut out along lines and cover with cloth and let stand in a cool place overnight.
Heat oven to 375. Uncover cookies, place on cookie sheet, and place in oven. Immediately reduce oven temperature to 300. Bake 20 to 25 minutes, or until set.
