Arroz Con Pollo - Tata Style

My grandmother made this all the time. She added peas and pimentos and olives. That is up to you. I watched my grandmother make this and created the recipe from watching her. The rice part is the only part that needs to be watched since it depends on how much chicken was used.

Ingredients
- Olive Oil
- 1 lb chicken breast - chopped
- 2 tsp dried oregano
- 2 tsp ground cumin
- 1/2 tsp ground white pepper
- 1 onion - chopped
- 1 pepper - chopped and deseeded
- 3 cloves garlic - chopped
- 1 tsp paprika
- 1 smal tomato
- 1/2 cup white cooking wine
- 1 tbs tomato paste
- salt and pepper to taste
- 2 cups uncooked white rice
- 3 1/2 cups water
- peas (if desired)
- pimento (if desired)

Step 1
Mix oregano, cumin and white pepper and coat chopped chicken. Set aside for 15 mins.
Heat oil and brown chicken, transfer to platter.
Sofrito;
Heat oil and cook onion, pepper, garlic and paprika on medium heat until soft. Do not brown.
In big pot, add tomato and cook for 1 minute.
Add chicken and cook for 1-2 minutes.
Add sofrito.
Add white wine, tomato paste, salt & pepper and let cook for a few minutes.
Mix.
Wash dried rice and add to pot with water.
Bring to a boil, then let it simmer for 20-25 minutes covered. Add more water if rice is too aldente. If too soupy, uncover the last 10-15 minutes.
