Country Chicken and Corn Stew

Ingredients
- 1 Tbsp extra virgin olive oil
- 1 medium onion, finely chopped
- 20 oz frozen corn, thawed
- 14-1/2 oz can chicken broth
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 c milk
- 1-1/2 tsp cornstarch
- 2 - 9-3/4 oz cans chunk white chicken, drained
- 14-1/2 oz can diced tomatoes

Preparation
Step 1
Warm oil in a large sauce pan over medium heat. Add onions, cook 5 minutes or until soft and translucent. Add corn, broth, salt, pepper and tomatoes. Simmer 3 minutes.
Combine milk and cornstarch in a cup. Stir until the cornstarch is dissolved. Add to the corn mixture. Stir in the chicken. Mix well and simmer for 3 minutes, or until slightly thickened.
