Ingredients
- 12 oz dried spaghetti, fettuccini or linguini
- 2 Tbsp olive oil
- 6 cloves minced garlic
- 1-1/2 lbs raw shrimp
- 2 - 14-1/2 cans petite diced tomatoes, drained
- 4 oz crumbled feta cheese

Preparation
Step 1
Heat oven to 400. Heat water to a boil and cook pasta according to package directions; drain and set aside.
Meanwhile, heat olive oil in a large, heavy skillet over medium heat. Add garlic; cook, stirring, until golden and fragrant, about 1 minute. Add shrimp, cook, stirring until shrimp begin to turn pink, about 2 minutes. Add tomatoes, stirring to blend; cook 2 minutes.
Toss shrimp and tomato mixture with cooked pasta. Place in a buttered 2 qt. casserole; sprinkle feta over the top. Bake until the sauce is bubble and feta is slightly melted, about 10 minutes.
Garnish with fresh parsley, if desired.
