  • 12 oz. canola or grape-seed oil
  • 25 cloves garlic, peeled
  • 1 tsp salt

Step 1

1. In a small ovenproof saucepan, warm the oil over low heat and add the garlic and salt. Cover the pan and place in a 250 deg. F oven for ~ 2 hours, until the garlic is completely soft but still intact.

2. Remove the garlic, and then cool and store both the oil and garlic in the refrigerator. Use the oil for cooking, and puree the garlic to use in mashed potatoes or sauces, or to smear on crusty bread.
