Ingredients
- 5 pound Chicken ; whole
- 4 quart Water ; to cover
- 16 small Carrot ; chopped
- 5 ribs Celery ; chopped
- 3 medium Onion ; chopped
- 3 Parsnips ; chopped
- 8 sprigs Parsley
- Salt & pepper ; to taste

Preparation
Step 1
Put whole chicken in a pot with enough water to cover. Add carrots, celery, onions, parsnips and salt and pepper. Boil 30 minutes, covered. Remove chicken and cool. Refrigerate broth and then remove fat. Shred chicken and add to the pot. Put on stove and bring to a boil.
Serve over noodles, rice or orzo which has been cooked separately.
