Ingredients

  • 1 carton (32 ounce) chicken broth
  • 1 cup uncooked wild rice
  • 1 cup uncooked brown rice
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 cup finely chopped celery
  • 1/4 cup finely chopped shallots
  • 1 cup chopped walnuts
  • 1 cup coarsely chopped dried apricots
  • 1/4 cup golden raisins
  • 1/4 cup dried cranberries
  • Salt and Pepper

Step 1

Pour broth and 1 cup water into a 2 to 3 quart saucepan; add wild rice and brown rice. Bring to boil over medium high heat. Cover pan, reduce heat to low and simmer about 50 minutes or until rice is done.

In the meantime, heat olive oil in a large skillet over medium high heat about 3 minutes. Add celery and shallots; cook 2 to 3 minutes. Stir in walnuts, apricots, raisins and cranberries. Stir and cook 3 to 4 minutes.

Fluff rice with a fork when done, toss rice with fruit-nut mixture. Season to taste with salt and pepper.
