Ingredients

  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1 1/3 cups water
  • 3/4 cup uncooked regular long grain white rice
  • 1/2 tsp onion powder
  • 1/4 tsp ground black pepper
  • 2 cups fresh or frozen mixed vegetables
  • 4 skinless, boneless chicken breast halves
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

stir the soup, water, rice onion powder, black pepper and vegetables in an 11 x 8 (2 qt) shallow baking dish.

top with the chicken. season the chicken as desired. cover

bake at 375 for 50 min or until chicken and rice are done. Top with cheese.

Let casserole stand for 10 min. stir rice before serving.

CHICKEN & ALFREDO CASSEROLE
use 1/4 cup parmesan for cheddar. Add 2 tsp cheese with soup. Use broccoli flowerets for vegetables. Top chicken with remaining parmesan.

CRUNCHY ONION CHICKEN & RICE CASSEROLE
prepare and bake as directed. uncover. top chicken with 1/3 cup frenchs fried onions, crushed. bake for 5 minutes more. Top with cheese and let stand 10 minutes.
