Blend 6 ounces feta and a splash of water in a food processor. Mix in a medium bowl with ½ cup finely chopped parsley, ¼ cup finely chopped mint, and 2 tablespoons finely chopped dill; season with salt and pepper. Drizzle with olive oil and top with dill. Makes 1 ¼ cups.
