Ingredients
- 2 boneless, skinless chicken breasts, cut into chunks
- 1 box (900ml.) ready to use chicken broth
- 1 tsp. ground cumin
- 1/3 cup uncooked regular long grain white rice
- 1 1/2 cups frozen corn niblets
- 1/4 cup chopped red or green pepper
- 1/2 cup chunky salsa
- 1 tbsp. chopped fresh cilantro leaves
- 2 tbsp. fresh lime juice
- crisp tortilla chips

Preparation
Step 1
Spray large saucepan with cooking spray and heat over medium high heat 1minute. Add chicken and cook until browned, stirring often.
Add broth, cumin and rice. Heat to a boil. Cover and simmer for 20 minutes.
Stir in corn, pepper, salsa, cilantro and lime juice; heat through. Top with crisp tortilla chips.
