To simmer, bring to boil 1 quart of water per pound of shrimp, seasoned with 1 small sliced onion, 1 bay leaf, and 10 -12 peppercorns. Add shrimp, reduce heat, and simmer 2 - 3 minutes per pound or until out flesh is pink. Drain immediately and cover with cold water to prevent further cooking. Shrimp may be peeled or un-peeled.

To saute, melt 1/3 cup butter per pound of shrimp in a heavy skillet. Add shrimp with or without shells. Cook quickly at medium high heat and remove when outer flesh is pink.

To microwave, arrange single layer of shrimp in microwave-safe dish. Cover with plastic wrap; leave one corner open as a vent. Cook on high power 2 -3 minutes per pound of thawed shrimp. Halfway through cooking time, stir and turn over shrimp. After cooking, allow to stand 1/3 of cooking time. Do not overcook.
