10 Minute Microwave Peanut Brittle

Ingredients
- 1 cup sugar
- 1/2 cup dark corn syrup
- 1/8 tsp salt
- 1 cup roasted, salted peanuts
- 1 Tbsp butter
- 1 tsp vanilla
- 1 tsp baking soda

Step 1
Butter a large cookie sheet pan well and set aside.
Combine sugar, corn syrup and salt in a microwave safe dish. Microwave on high for 5 minutes.
Stir in peanuts. Microwave on high for 5 minutes, stirring after 2 and 4 minutes, until syrup and peanuts are lightly browned.
Stir in butter, vanilla and baking soda until light and foamy. Spread to 1/4 inch thickness on a well buttered cookie sheet pan.
For very thin peanut brittle, cool on cookie sheet 3 to 5 minutes. Lift from pan and stretch to desired thickness.
