Chocolate Roulage

Ingredients
- 4 ounces semi-sweet chocolate
- 3 Tbsp warm water
- 6 eggs,separated
- 1 c sugar
- 3 Tbsp flour-soft wheat
- 1/2 c icing sugar and 1/2 c cocoa mixed
- 1/2 pint whipping cream
- 1/4 c sugar
- vanilla,rum or other flavouring

Preparation
Step 1
Break up chocolate and place in a smll glasss dish with warm water. Put into a bowl of hot water until chocolate is soft.
Beat whites until frothy and add 1/2 of the sugar.
Continue beating until stiff.
Add the rest of the sugar to the yolks and beat until thick.
Add melted chocolate to yolk mix.
Blend well.
Add a heaping tablespoon of egg whites to the chocolate/yolk mix and blend.
Pour on the egg white mixture and blend while sprinkling on the flour.
Do not overmix or the batter will collapse.
Pour into a jelly roll pan,the bottom of which is first lined with tissue paper and then with wax paper
Set oven at 400 and turn down to 375 before putting pan in
Bake10 minutes,turn oven off and leave for five minutes more
Remove,cover with wax paper and then a cold damp cloth.
Cool thoroughly,remove cloth,paper and loosen edges with a knife.
Dust with cocoa mix,turn out,fill with whipped cream and roll up.
