Ingredients
- ■Condiments:
- ■1 large onion, chopped
- ■1 clove garlic, minced
- ■1 large can (1 qt, 15 oz) regular strength chicken broth
- ■1-16 oz can tomatoes
- ■2 medium carrots, sliced
- ■2 medium potatoes, diced
- ■1/2 tsp pepper
- ■2 medium ripe avocados, sliced
- ■Lemon juice
- ■1/2 pound each Monterey Jack and cheddar cheeses
- ■Sour cream
- ■Chopped green onions
- ■Chopped hard boiled eggs
- ■Tortilla chips
- ■1 can chopped green chiles
- ■1/2 pound bacon, fried and broken into small pieces
- ■Bottled taco sauce to add heat

Step 1
In a 6-8 qt stockpot, fry bacon until crisp. Drain and set aside to use as a condiment. Add onion and garlic to drippings and saute until limp. Add chicken broth, tomatoes, and their liquid, carrots, potatoes and pepper. Bring to a boil then reduce heat and simmer until ready to serve. While soup is simmering, prepare the rest of the condiments in separate bowls. To serve, line bowls with a few slices of avocado then ladle in soup. Guests can add any condiments as desired.
