Ingredients

  • ■1 large onion, chopped
  • ■1 clove garlic, minced
  • ■1 large can (1 qt, 15 oz) regular strength chicken broth
  • ■1-16 oz can tomatoes
  • ■2 medium carrots, sliced
  • ■2 medium potatoes, diced
  • ■1/2 tsp pepper
  • ■2 medium ripe avocados, sliced
  • ■Lemon juice
  • ■1/2 pound each Monterey Jack and cheddar cheeses
  • ■Sour cream
  • ■Chopped green onions
  • ■Chopped hard boiled eggs
  • ■Tortilla chips
  • ■1 can chopped green chiles
  • ■1/2 pound bacon, fried and broken into small pieces
  • ■Bottled taco sauce to add heat

Preparation

Step 1

In a 6-8 qt stockpot, fry bacon until crisp. Drain and set aside to use as a condiment. Add onion and garlic to drippings and saute until limp. Add chicken broth, tomatoes, and their liquid, carrots, potatoes and pepper. Bring to a boil then reduce heat and simmer until ready to serve. While soup is simmering, prepare the rest of the condiments in separate bowls. To serve, line bowls with a few slices of avocado then ladle in soup. Guests can add any condiments as desired.
