Pork Chops, Breaded in Wine and Garlic

Ingredients
- 8 loin or rib pork chops, cut 1/2" thick and trimmed of excess fat
- 1/2 cup flour
- 2 eggs
- 2 tsp cold water
- 1 cup toasted bread crumbs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp powdered rosemary
- 1/4 tsp powdered sage
- 1/4 tsp garlic powder
- 2 //3 cup California dry white wine

Preparation
Step 1
Dip chops in flour to coat, then in egg mixture (eggs and water, beaten). Then dip in bread crumb mixture, (bread crumbs, salt, pepper, rosemary,sage and garlic powder). Let dry on rack at room temperature for 10 mins. Brown chops 3 to 4 mins on each side over moderate heat in a large heavy skillet brushed with oil. After chops are browned place on a large flat plate while preparing wine and garlic sauce. Into juices remaining in fry pan (removed from heat) add crushed garlic to taste and 1 Tbsp wine for each chop. Stir until mixed. In a casserole with a cover, place 4 Tbsp of the sauce in the casserole then 4 chops, then repeat. Top with any remaining sauce. Cover and bake for 50 mins at 350 degrees.
