Ingredients

  • 3/4 cups sugar
  • 1/2 cup dark corn syrup
  • 2-1/2 Tbsp unsalted butter cut into pieces
  • 1-1/2 tsp vanilla extract
  • 1-1/2 tsp Bourbon
  • 1/4 tsp Kosher salt
  • 2 Large eggs
  • cooking spray for pans
  • 1 cup pecan pieces
  • 1/2 recipie Paula Deens Pie Crust
  • whipped topping

Preparation

Step 1

-Pre-heat oven to 350

-Stir the sugar and corn syrup in a saucepan over medium heat until the sugar melts.

- Remove from the heat, and Add the butter, stir slowly with a rubber spatula to keep the mixture from getting foamy.

-Gently stir in vanilla, bourbon and salt.

-Whisk the eggs in a medium bowl. Gradually add the sugar mixture whisking until incorporated.

- lightly mist 6 tartlet pans with cooking spray.

-Unfold the pie dough, cutting an inch larger around the diameter.

-Press into pans, place on a baking sheet.

-Divide the pecans evenly among the pans, and pour the filling on top.

BAke until firm @45 minutes. Cool.
