Ingredients

  • 1 large onion, chopped
  • 1 Tbsp olive oil
  • 1 tsp minced fresh garlic
  • 1 1/2 cups chicken broth
  • 1/2 tsp ground turmeric
  • 1/4 tsp dried thyme leaves, crumbled
  • 1 cup uncooked white long-grain rice
  • 8 oz uncooked medium-sized shrimp
  • 4 oz. lean ham, cut into small chunks (3/4 cup)
  • 1 cup frozen peas

Step 1

In a deep 3 quart microwave-safe dish, mix the onion, oil and garlic.

Cover and microwave on High for 3 - 5 minutes or until onion is beginning to soften.

Stir in broth, turmeric, thyme, and rice. Cover and cook on high 14 - 16 minutes, stirring twice until the rice is almost tender.

Shell and de-vein the shrimp.

Add the ham, peas, and shrimp to the rice. Cover and cook on high 2 - 4 minutes longer or until rice is tender and the shrimp are almost cooked but still look slightly raw.
