Ingredients

  • Filling:
  • 3/4 cup flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 1/4 tsp. salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup pumpkin
  • 1 cup chopped walnuts (optional)
  • powdered sugar
  • 1 pkg. (8 oz.) softened cream cheese
  • 1 cup powdered sugar
  • 6 Tbsp. butter or margarine, softened
  • 1 tsp. vanilla

Step 1

Preheat oven to 375 degrees. Grease 15 x 10 inch jelly roll pan; line pan with wax paper and then grease and flour the paper.
Combine the dry ingredients. Beat eggs until thick. Add pumpkin and dry ingredients. Spread into prepared pan and sprinkle with nuts.
Bake 13 to 15 minutes. or until cake springs back when touched. Immediately loosen and turn onto a tea towel sprinkled with powdered sugar, peeling off paper. Roll cake and towel together starting with narrow end. Cool.
Beat filling ingredients till smooth. Carefully unroll cake and spread with filling. Reroll without towel. Wrap in plastic wrap and refrigerate 1 hour. Sprinkle with powdered sugar before serving.
Makes about 10 servings.
