Ingredients

  • 30 Vanilla wafers. crushed
  • 4 tablespoons melted butter
  • 16 oz cream cheese ( 2-8 oz packages)
  • 1/2 cup cream of coconut
  • 1 cup well-drained crushed pineapple
  • 2 tablespoons of chopped and well-drained maraschino cherries
  • 1/2 cup shredded coconut, for topping
  • 12 whole cherries with stems

Preparation

Step 1

In a 9x12 baking dish place crushed wafers and pour butter over wafers. Mix thoroughly. Press evenly in pan to for bottom crust. Refrigerate for about 1 hour to firm up crust.

In mixer bowl combine cream cheese and cream of coconut. Mix until smooth. Gently fold in pineapple and cherries keeping light and airy.

Pour and spread cream cheese mixture evenly into completely set bottom crust. Sprinkle with coconut over top. Decorate evenly with 12 whole cherries with stems over coconut. Refrigerate for 2 hours until firm enough to cut into squares.

You can also make it lower in fat by using low fat wafers, cream cheese and the whipped topping.
