Ingredients

  • 5 Tbsp (1 tin) red curry paste
  • 2 Tbsp peanut oil
  • 1 1/2 pounds sliced chicken
  • 2 cans coconut milk
  • 1/2 cup shredded bamboo shoots
  • 1 red pepper, sliced thin
  • 1/4 cup Thai sweet basil
  • 2 Tbsp brown sugar
  • 6 Tbsp fish sauce
  • Garnish: red or green chili peppers, Cilantro

Step 1

In a wok over medium high heat, add the curry paste and oil, until the curry paste bubbles. Add the chicken and stir fry for 5 minutes. Add the remaining ingredients and simmer for 10 minutes. Garnish.
