Ingredients

  • 6 lamb shanks (1 per person)
  • 1 clove garlic
  • 1 yellow onions; rough chopped
  • 1 carrot; rough chopped
  • 1 stalk celery; rough chopped
  • 1/2 leek (peel off outer layers/ use in; diced
  • 1 lemon; cut in 1/2 / place in pot
  • 2 branch rosemary; toss in whole
  • 1 bay leaf

Step 1

Season (salt, pepper) and dust lamb shanks with flour. In large, heavy bottomed, sauce pan, pre-heat pan and add some olive oil. Sear lamb shanks on both sides til golden brown and set aside. In same pot, add fresh olive oil and saute diced vegetables until translucent. Add garlic, lemon, rosemary and seasoning; saute. Deglaze with white wine (allow wine smell to burn off before adding remaining ingredients. and add a quart of stock or water (Add enough water to come 1/2 way up lamb shanks). Add lamb shanks, cover and cook for about 1 1/2 hours in a 350 degree oven. The shank meat should pull away from the bone (check periodically).

Remove the meat from the pan and set aside, covered with foil. Remove rosemary, lemon and bay leaf. Put remaining ingredients into food mill with a fine plate. Grind into small sauce pan and keep warm. Adjust seasonings. Can add bread crumbs to thicken.

Serve lamb shanks with sauce poured over the top.

NOTE: other seasonings can be used with or inplace of the ones listed.
