  • 3/4 c. canned crushed pineapple
  • 2 eggs
  • 3/4 c. sugar
  • 1/3 c. vegetable oil
  • 1/4 c. unsweetened applesauce
  • 1 tsp. vanilla
  • 1 1/4 c. flour
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 c. grated carrot
  • 1.2 c. raisins

Step 1

Drain pineapple. Beat eggs with sugar till pale. Beat in oil, applesauce and vanilla. Whisk together flour, cinnamon, baking powder, baking soda and salt; stir into dgg mixture just till moistened. Stir in pineapple, carrots and raisins.

Bake approximately 45 minutes at 350 in 9 " pan.
