Ingredients
- 3 cups chopped turkey
- 10 tablespoons butter
- 1 tablespoon flour
- 1/2 cup Madeira
- 1 cup turkey bouillon
- 3 tablespoons chopped green olives
- juice of 1/2 lemon
- 6 slices white bread
- salt
- pepper

Preparation
Step 1
The turkey should be free of skin and tendons and chopped rather coarsely.
Heat 3 tablespoons of butter in a saucepan and stir in the flour with a wooden spoon. Add the Madeira and the bouillon. Season with salt and pepper and cook until the sauce thickens. Add the turkey and the chopped olives. Add the lemon juice and taste for seasoning.
