Ingredients

  • 500 g ground turkey
  • 3 cups cooked or canned black beans (liquid reserved)
  • 1 12oz can corn (drained)
  • 2 cloves garlic
  • 2 jalapeno peppers
  • 1 cup finely chopped celery (with leaves)
  • 1 lg onion chopped
  • 1/2 lg green pepper
  • 1 tbsp ground coriander
  • 2 tbsp ground cumin
  • 1 tpsp cayenne pepper
  • salt and pepper to taste
  • Optional (not calculated in nutritional information)
  • Mixed baby greens
  • Chopped onion
  • Diced tomatos
  • Salsa
  • Grated cheddar
  • Sour cream
  • Fresh chopped Cilantro

Preparation

Step 1

Brown ground turkey
Season with spices, salt and pepper
Add celery, onion and green pepper and saute until onions are translucent
Add corn and saute for 3-5 minutes.
Add black beans with 1/4 cup of the black bean liquid and heat through.

Serve over a large serving of mixed greens, chopped onions, chopped tomatos.

Garnish with salsa, grated cheese, sour cream and fresh chopped cilantro.
