Ingredients
- 500 g ground turkey
- 3 cups cooked or canned black beans (liquid reserved)
- 1 12oz can corn (drained)
- 2 cloves garlic
- 2 jalapeno peppers
- 1 cup finely chopped celery (with leaves)
- 1 lg onion chopped
- 1/2 lg green pepper
- 1 tbsp ground coriander
- 2 tbsp ground cumin
- 1 tpsp cayenne pepper
- salt and pepper to taste
- Optional (not calculated in nutritional information)
- Mixed baby greens
- Chopped onion
- Diced tomatos
- Salsa
- Grated cheddar
- Sour cream
- Fresh chopped Cilantro

Preparation
Step 1
Brown ground turkey
Season with spices, salt and pepper
Add celery, onion and green pepper and saute until onions are translucent
Add corn and saute for 3-5 minutes.
Add black beans with 1/4 cup of the black bean liquid and heat through.
Serve over a large serving of mixed greens, chopped onions, chopped tomatos.
Garnish with salsa, grated cheese, sour cream and fresh chopped cilantro.
