Ingredients

  • 2 tbsp butter
  • 1 1/2 cups long-grain rice
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 clove garlic, minced
  • 2 cups water
  • 1 (14 oz) can diced tomatoes with green chilis
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 cup shredded cheddar

Step 1

In large saucepan, melt butter over medium heat.
Add rice, onion, peppers, and garlic.
Cook until rice is browned and vegetables tender.
Stir in water, tomatoes, and spices.
Bring to a boil, reduce heat and simmer until rice is tender, about 15-17 minutes.
Stir in cheese.
