Aunt Sadie's Apple Cake

Ingredients

• 2 cups flour
• 2 cups sugar
• 2 tsp baking soda
• 1/2 tsp cinnamon
• 1/2 cup oil (I used 1/2 cup applesauce)
• 4 eggs
• 1 tsp vanilla
• 5 cups finely chopped peeled apples (5-6 good sized)
• 2 cups chopped walnuts 1/4-1/2 cup raisins

Preparation

Step 1

In large bowl of mixer, combine flour, sugar, soda, cinnamon, oil, eggs, and vanilla. Beat at medium speed til well mixed. Stir in apples, walnuts, and raisins. Turn into well greased bunt pan. Bake 350 for 60-65 minutes til pick comes out clear. Cool in pan 10 minutes then turn out on rack to cool completely.

If desired, sprinkle with confectionary sugar.
