Ingredients
- 1/2 tsp Salt
- 1 large head Cauliflower, cut into small florets or 16 oz pkg of frozen
- Olive Oil cooking spray
- 1/4 cup Heavy Cream or Regular Half n Half
- 4 oz Reduced-Fat Cream Cheese
- 1.5 tsp Dijon Mustard
- 2 cups Reduced-Fat Cheddar Cheese - shredded (set aside 1/2 cup for topping)
- 1/8 tsp Garlic Powder
- 6 oz Baked Ham - cubed

Preparation
Step 1
Preheat oven to 375` degrees. Bring large pot of water to a boil. Season the water with salt. Spray a 8 x 8 baking dish with olive oil spray. Cook Cauliflower in boiling water until crisp, yet tender, approx 5 minutes. Drain well and pat between several layers of paper towel to dry. Transfer the cauliflower to the baking dish and set aside.
In a small saucepan, whisk together the cream, cream cheese and mustard until smooth. Stir in 1.5 cups of the cheese, salt, pepper & garlic powder & whisk until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower and stir to combine. Top with remaining 1/2 cup of cheese and bake until brown & bubbly hot, approx 15 minutes. Serve
