Ingredients

  • Baby Spinach OR Mixed greens
  • Turkey Bacon
  • Eggs - hard boiled
  • Iceberg Lettuce
  • Cucumbers
  • Black Grapes
  • Bean Sprouts - Optional
  • Sour Cream
  • Low fat Mayonnaise
  • Parmesan Cheese

Preparation

Step 1

Layer 1: Layer 1/2 bag of baby spinach leaves into the salad bowl (do not tear leaves, it makes them soggy) (may substitute mixed greens)

Layer 2: 10 pieces turkey bacon. Cook until crispy, crumble into a layer

Layer 3: 4 hardboiled eggs, chopped into pieces. Cool the eggs completely prior to adding this layer to salad

Layer 4: 1/2 bag of iceberg lettuce, chopped into bite size pieces. Iceberg lettuce adds a nice crunch. Putting a second layer of lettuce here protects the upper layers from the eggs so each layer stays fresh

Layer 5: 2 peeled medium cucumbers - remove seeds & cut into small pieces

Layer 6: 2 cups seedless black grapes, cleaned & cut in half OR use 1/2 carton of fresh crispy bean sprouts - for another low fat alternative

Dressing: Combine 3/4 cup sour cream, 3/4 cup low fat mayonnaise, salt & pepper to taste. Mix thoroughly. Spread over the top of salad layers with spatula. Sprinkle with low fat Parmesan cheese (approx 1/2 cup) Cover with plastic wrap and store in fridge overnight
