Ingredients
- 5 lbs - Whitefish and Yellow Pike ground ( 2 1/2 lbs each for 5 lbs total fish}
- 5 eggs
- 7-8 tosses of salt
- 30-40 grinds of pepper
- 2-3 tbsp of sugar
- 1/3 cup matzoh meal
- 1 large onion grated
- 6 carrots slice
- d into chips
- 2 large onions sliced
- water for boiling

Step 1
Combine fish and eggs in a large bowl. Add salt and pepper and sugar, but keep tasting to make sure there is enough of each. Add grated onion and combine until uniform. Gently mix in matzoh meal. The mixture should be coming together in a manner similar to loose bread dough.Mix in a mixer on low until it comes together. It should not be too sweet or too salty
In a large pot make a bed of the sliced onion and carrots.Boil water before putting in fish. With wet hands, make dumplings of fish mixture (about the size of a large lime). Place the patties on the carrot and onion base. Cover with water. You should have at least an inch of water above the dumplings. ( I usually end up using two stock pots. It's ok to double stack the dumplings, but you do not want to triple stack.)
Constantly check the fish and move it around in the two hours it is cooking over low heat and low boil. and then reduce to a low boil and cook for 2 hours - skimming along the way.
Remove fish, carrots and onion and refrigerate overnight. Place liquid in a container and refrigerate separately over night.
