Ingredients

  • Dressing:
  • 1/4 cup rice wine vinegar
  • 2 tbsp creamy peanut butter
  • 1 tsp finely grated freshly peeled ginger
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 tsp toasted sesame oil
  • 1/2 cup canola oil
  • Pinch of red pepper flakes
  • Kosher salt and freshly ground pepper
  • Salad:
  • 1 bag (10oz) Hearts of Romaine Lettuce
  • 1 bag (10oz) Angel Hair Cole Slaw
  • 3 carrots, peeled, halved lengthwise, and slice into thin matchsticks
  • 1/2 cup thinly sliced scallions
  • 1/4 cup coarsely chopped fresh cilantro leaves
  • 3/4 cup rice noodles

Preparation

Step 1

1. Prepare the Peanut Dressing: In a small bowl whisk together all the ingredients
2. In a large bowl toss together the vegetables, cilantro and rice noodles. Add the dressing to taste and gently toss. Season with salt and pepper to taste. Serve immediately.
