Ingredients
- Dressing:
- 1/4 cup rice wine vinegar
- 2 tbsp creamy peanut butter
- 1 tsp finely grated freshly peeled ginger
- 1 tbsp soy sauce
- 1 tbsp honey
- 2 tsp toasted sesame oil
- 1/2 cup canola oil
- Pinch of red pepper flakes
- Kosher salt and freshly ground pepper
- Salad:
- 1 bag (10oz) Hearts of Romaine Lettuce
- 1 bag (10oz) Angel Hair Cole Slaw
- 3 carrots, peeled, halved lengthwise, and slice into thin matchsticks
- 1/2 cup thinly sliced scallions
- 1/4 cup coarsely chopped fresh cilantro leaves
- 3/4 cup rice noodles

Preparation
Step 1
1. Prepare the Peanut Dressing: In a small bowl whisk together all the ingredients
2. In a large bowl toss together the vegetables, cilantro and rice noodles. Add the dressing to taste and gently toss. Season with salt and pepper to taste. Serve immediately.
