Ingredients

  • 2 cups flour
  • 1/4 t. salt
  • 1 cup sugar
  • 1/2 t. peppermint
  • 8 oz. bittersweet chocolate, coarsely chopped
  • 1/2 cup cocoa
  • 1 cup butter
  • 2 t. vanilla
  • 1 t. oil

Step 1

In bowl, whisk together flour, cocoa and salt and set aside.

In large bowl, beat together butter and sugar until fluffy, about 3 minutes. Add vanilla and peppermint and mix until well combined. Then add flour and mix until well combined.

Turn dough onto work surface and knead a couple of times to work in any crumbs. Divide dough in half and shape each into 11" logs. Wrap each log on waxed paper or plastic wrap and refrigerate at least 2 hours or overnight.
Preheat oven to 350°. Cut logs into 1/4" slices and place 1" apart on parchment lined cookie sheet and bake 8-11 minutes or until set.

Remove from oven and put sheets on rack until cookies are cooled completely. Melt chocolate, remove from heat and stir in oil. Dip tops of cookies into chocolate and return to sheet. Place sheets in refrigerator for 15 minutes to set the chocolate.
