Ingredients

  • 2 eggs
  • 2/3 cup flour
  • 2 (10-oz) packages frozen chopped spinach, thawed and squeezed dry.
  • 1 (24-oz) container low fat cottage cheese
  • 3 cups grated white cheddar cheese
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

Coat a 2 quart baking dish with cooking spray
In a large mixing bowl beat eggs and flour until smooth.
Add rest of ingredients mix and pour into baking dish. Smooth the top.
Bake uncovered for 1 hour at 350 degrees or until heated through.

Note. Can be made up to 2 days ahead and kept in refrigerator then baked.
