Ingredients

  • CRUST
  • 2 cups flour
  • 1/2 cup icing sugar
  • 1 cup chilled butter, cut into chunks

  • CREAM CHEESE FILLING
  • 8 oz. light cream cheese (250 g)
  • 1/2 cup icing sugar
  • 2 tbsp. flour
  • 2 eggs
  • 1 tsp. vanilla

  • LEMON FILLING
  • 4 eggs
  • 2 cups sugar
  • 1/4 cup flour
  • 1 tsp. grated lemon peel
  • 1/4 cup lemon juice
  • powdered sugar, if desired

Preparation

Step 1

Crust

Mix crust ingredients into mixing bowl and mix until well blended and mixture starts to stick together.
Press into a ungreased 15 x 10" baking pan.
Bake @ 350 F for 14 to 16 minutes, or until set.
(Note: Check crust after 0 minutes and prick with a fork if it puffs up during baking)
Remove from oven.

Cream Cheese Filling
Mix cream cheese filling ingredients together in mixer until smooth and creamy.
Pour over partially baked Crust.
Bake @ 350 F for 6 to 7 minutes, or until filling is slightly set.
Remove from oven.

Lemon Filling
Mix together all lemon filling ingredients together except lemon juice, until blended.
Gradually add lemon juice and mix until well blended.
Pour over cream cheese filling
Bake @ 350 F for 14 to 16 minutes, or until filling is set.
(Note: Filling may puff up during baking but will fall when removed from oven)
Sprinkle with icing sugar if so desired.
Cool completely in pan.
