Ingredients

  • 2 Tbsp cornmeal
  • 2 tsp EVOO
  • 1 large onion, thinly sliced
  • 1 1/2 cus finely chopped pernil
  • 2 lbs ready made pizza dough
  • 20 think sliced boiled ham
  • 1/4 cup mustard
  • 3 Tbsp plus 1 tsp sweet pickle relish
  • 10 slices swiss cheese
  • 1 Tbsp milk
  • 1 large egg yolk

Preparation

Step 1

1. Sprinkle cornmeal over two greased baking sheets; set aside.
2. In a medium skillet, heat the olive oil over medium heat. Add the onion and cook until softened and browned. Place the onion and pernil in a food processor and pulse to combine; set aside.
3. Roll out each piece of dough into an 8" round. On each round, place 1 slice ham, a dollop of mustard, 1 tsp relish, 2 Tbsp pork-onion mixture, 1 slice swiss cheese and 1 more slice of ham. Moisten the edges of the dough with water, fold the dough in half and press the edges together to seal. Place the buns on the prepared baking sheets, cover and let rise in a warm place for 30 minutes. MEanwhile, heat the oven to 375.
4. In a small bowl, beat the milk and egg yolk; brush the mixture on the cubanos. Bake turning the sheets halfway through until golden brown, about 30 minutes.
