Ingredients
- 10 ounces dried pappardelle
- 1 stick unsalted butter
- 1 lb 4 oz mushrooms
- 1/2 cup finely chopped shallots (about 2)
- 1/3 cup dry white wine, such as sauvignon blanc
- 8 ounces brie cheese

Preparation
Step 1
1. cook pasta and drain. reserve 3/4 cup cooking water
2. heat 2 tbsp butter in skillet over high heat. melt 2 tablespoons butter. brown mushrooms add shallots until tender. add wine. cook until wine is reduced by half about 3 minutes. Add reserved cooking water, bring to a boil. swirl in remaining butter. Season with 1 tsp salt
3. toss pasata with mushrooms and cheese until pasta is coated and cheese starts melting.
