Ingredients

  • 2 pounds of white potatoes and cut into 3/4 inch cubes
  • 1/4 cup fresh lemon juice
  • 1 tbsp chopped fresh oregano
  • 3 tbsp chopped fresh parsley
  • 1/4 cup olive oil
  • salt and pepper
  • paprika to taste

Preparation

Step 1

Boil potatoes till slightly softened. Drain. Toss with lemon juice and let sit for 15 minutes. Add all other ingredients except paprika to potatoes and toss. Bake at 450 degrees for 35 minutes. Sprinkle with paprika.
