*GIANT GREEN SALAD

Ingredients
- DRESSING:
- 1/10 of recipe in ( )
- 3 tablespoons butter (1 tea.)
- 4 cups walnut halves (2/5 cup)
- 1/4 cup sugar (1 ½ T.)
- 4 bunches romaine, torn (½ bunch)
- 16 cups torn leaf lettuce (1 ½ cup)
- 6 cups dried cranberries (3/5 cup)
- 4 medium sweet yellow peppers, diced (½ small pepper)
- 4 cups (16 ounces) crumbled feta cheese (½ cup or 1.6 oz.)
- Coarsely ground pepper, optional
- 4 envelopes Italian salad dressing mix (½ envelope)
- 2 cups canola oil (3 T.)
- 1 cup balsamic vinegar (1 ½ T.)
- 3/4 cup water (1 T.)
- Directions:
- ● In a large heavy skillet, melt the butter. Add walnuts; cook over medium heat until toasted, about 4 minutes.
- ● Sprinkle with sugar; cook and stir for 2-4 minutes or until sugar is melted. Spread on foil to cool.
- ● Meanwhile, in several large salad bowls, combine the romaine, lettuce, cranberries, yellow peppers, cheese and pepper if desired.
- ● In a jar with a tight-fitting lid, combine the dressing ingredients; shake well.
- ● Drizzle over salad and toss to coat.
- ● Sprinkle with sugared walnuts..
