Savory Stuffed Breadsticks

Ingredients
- 4 slices bacon, cut up
- 1/2 cup chopped onion
- 1/4 cup finely shredded Parmesan cheese
- 1/4 cup shredded sharp cheddar
- cheese (1 ounce)
- 2 tablespoons sliced green onion
- 1 tablespoon snipped fresh thyme
- 6 soft breadsticks or dinner rolls

In a medium skillet cook bacon until crisp. Remove bacon; drain on paper towels. Drain off fat, reserving 1 tablespoon drippings in skillet. Add onion to drippings. Cook over medium heat until tender, stirring occasionally. Cool slightly. Stir in bacon, cheeses, green onion, and thyme.
Cut each breadstick in half lengthwise, cutting to but not through opposite side. Spread cut surfaces with bacon mixture.
Fold six 24x18-inch pieces of heavy foil in half to make 18x12-inch rectangles. Place each breadstick in center of foil. Bring up opposite edges of foil and seal with a double fold. Fold remaining edges together to completely enclose breadsticks, leaving space for steam to build. If desired, chill for up to 8 hours.
For a charcoal grill, grill breadstick packets on the rack of an uncovered grill directly over medium coals for 8 to 10 minutes or until cheddar cheese is beginning to melt, turning occasionally. (For a gas grill, preheat grill. Reduce heat to medium. Place breadstick packets on grill rack over heat. Cover; grill as above.) Makes 6 breadsticks.
