Ingredients

  • 1 (15 oz.) can Shoepeg Corn, drained
  • 1 (15 oz.) can Black-Eyed Peas, drained
  • 1 Avocado, peeled and diced
  • 2/3 c. Cilantro, chopped
  • 2-3 Green Onions, chopped
  • 3-4 Roma Tomatoes, chopped
  • 1/4 c. Olive Oil
  • 1/4 c. Red Wine Vinegar
  • 2 Garlic Cloves, crushed
  • 3/4 t. Salt
  • 1/8 t. Ground Pepper
  • 1 T. Ground Cumin

Preparation

Step 1

In a medium bowl, combine corn, black-eyed peas, avocado, cilantro, green onions and tomatoes.
In a small bowl, whisk together olive oil, vinegar, garlic, salt, pepper and cumin. Add to the vegetables mixture and toss to coat.
Service with tortilla chips, corn chips or toasted pita chips.
